Earth & Sun’s Cuisine is Mikia Limprevil’s kitchen. The Haitian side of the menu is the food she grew up eating, cooked the way it is cooked at home rather than toned down for a crowd.
The American side is there because most tables in Delaware hold both. A wedding here might want griot and legim next to roast chicken and mac and cheese, and that is the point.
Organic ingredients are used where they change the plate, not as a label on a brochure. Produce is sourced locally when the season allows.
